POLYNESIAN CHICKEN SALAD 
2 c. cooked chicken, diced (can substitute 2-7 oz. cans tuna)
1 can (20 oz.) pineapple tidbits
3/4 c. shredded coconut
1 c. diced celery
1/2 c. toasted slivered almonds

DRESSING:

1/2 c. mayonnaise
2 tbsp. lemon juice
1 tsp. soy sauce
1/2 tsp. nutmeg
1/8 tsp. ground ginger

Combine all ingredients and serve.
