BEEF & RICE CASSEROLE 
1 1/2 - 2 lbs. ground beef
1/2 c. chopped onion
1 c. chopped celery
1/4 c. chopped green pepper
1 c. uncooked rice
1 lg. can tomatoes
1 tsp. salt
1 tbsp. chili powder
1/4 tsp. pepper
1 c. chopped olives

Saute next 4 ingredients with ground beef in skillet until crumbly. Add remaining ingredients. Bring to a boil. Pour into two quart casserole. Cover and bake at 325 degrees for 1 hour. Serves 6 to 8.
