FLUFFY POTATO CASSEROLE | |
2 c. mashed potatoes, about 3 lbs. 1 (8 oz.) pkg. softened cream cheese 1 onion, finely chopped 2 well beaten eggs 1 tbsp. flour Salt & pepper to taste 1 (3 oz.) can French fried onion rings, crushed Combine first 7 ingredients. Beat 2 to 3 minutes at medium speed of electric mixer. Pour into greased 1 1/2 quart casserole. Spread crushed onions evenly over top. Bake, uncovered at 300 degrees for 30 to 35 minutes. 4 servings. |
