BANANA PUDDING I 
1 1/4 c. sugar
3 tbsp. all-purpose flour
1/4 tsp. salt
3 c. milk
5 eggs, separated
1 1/2 tsp. vanilla
10 fully ripe bananas
Vanilla wafers

Combine 1 cup sugar, flour and salt in top of double boiler. Stir in milk. Stir constantly over boiling water until thick. Cook uncovered 15 minutes. Beat egg yolks. Gradually stir in hot mixture. Return to double boiler. Leave for 5 minutes stirring constantly. Slice bananas. Line bottom of a 1 quart casserole with vanilla wafers. Top with layer of bananas. Pour a portion of custard over bananas. Repeat procedure ending with custard on top. Beat egg whites stiff, not dry. Gradually add remaining 1/4 cup sugar. Beat until stiff peaks form. Spoon meringue over custard, swirling into peaks. Bake in preheated 425 degree oven for 5 minutes.
