MICROWAVE CHICKEN PARMESAN 
2 chicken breast, split & boned
3/4 c. seasoned dry bread crumbs
1/4 c. Parmesan cheese
1/4 tsp. paprika
1 egg, beaten with 1/4 c. water
1 (8 oz.) can tomato sauce or 1 c. spaghetti sauce
1 c. mozzarella cheese
2 tbsp. oil
Oregano

Dip chicken in bread crumbs mixed with Parmesan cheese and paprika, then in egg and again in bread crumb mixture. Coat bottom of oblong dish with 1 tablespoon oil. Place chicken in dish; sprinkle a little oil on top. Heat on high 2 to 2 1/2 minutes, turn chicken over and heat an additional 2 to 2 1/2 minutes. Top with sauce and season with oregano; heat 3 1/2 to 4 1/2 minutes or until sauce is hot. Sprinkle with Mozzarella cheese, let stand, covered, 5 minutes or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
