HARVARD BEETS 
1 tbsp. cornstarch
1/3 c. sugar
1/4 c. water or beet juice
1/4 c. vinegar
2 c. cooked beets (whole, sliced or quartered)
1/2 tsp. salt

Blend cornstarch and sugar. Stir in liquid, vinegar and salt. Bring to boil, stirring constantly. Add beets and simmer for 5 minutes.
