MICROWAVE ITALIAN - SEASONED
CHICKEN
 
4 boneless, skinless chicken breast halves
2 tbsp. mayonnaise
1/3 c. Italian-seasoned bread crumbs
3 tbsp. grated Parmesan cheese
1/8 tsp. paprika
3 c. frozen cut broccoli or Italian-style mixed vegetables

In large strainer rinse vegetables with warm water to thaw slightly. Rinse chicken pieces and pat dry. Place vegetables in 1 3/4 quart casserole dish. Fold chicken pieces in half, secure with wooden toothpicks. Brush chicken on all sides with mayonnaise. Combine bread crumbs and cheese. Roll chicken in crumb mixture, coating generously. Arrange chicken pieces with thickest parts towards edge of casserole. Sprinkle chicken with paprika and any remaining crumbs. Cook covered at HIGH power for 10 to 12 minutes or until chicken is no longer pink in center.

Since microwave ovens vary in power, you may need to adjust your cooking time.
