MEXICAN RICE 
1 c. uncooked rice
1 tbsp. olive oil
1 tbsp. butter
1 clove garlic
1/4 c. minced onion
1 tsp. salt
1/2 tsp. pepper
1/3 c. tomato sauce
2 c. water

In skillet heat oil and butter. Add rice and cook until light brown. Add onions and garlic and saute until onion is tender. Add salt, pepper, tomato sauce, and water.
