PINEAPPLE COTTAGE CHEESE JELLO
SALAD
 
1 lg. box apricot peach Jello
1 lg. carton lg. curd cottage cheese
1 lg. can crushed pineapple
1 tbsp. lemon juice
2 c. boiling water

Mix Jello with hot water until completely dissolved. Add lemon juice, cheese and pineapple. Stir very well. Put in large flat pan. Chill until firm. Cut in slices and serve on lettuce with or without a dab of salad dressing. Serves 12 or more.

Following the directions for use, Jello boxes (at least the ones I have used in recipes) advise consumers NOT to combine pineapple or kiwi fruit in Jello. This is just a word of caution to check the instructions on the Jello product you use!

As someone else stated, the enzymes in FRESH pineapple, papaya & kiwi will prevent the gelatin from jelling. With canned pineapple, the enzymes are destroyed through heat/processing and are the most common fruit found in thousands of jello salad recipes over many decades. You'd be hard pressed to find a recipe WITHOUT pineapple in it. My grandmother was allergic and could not eat fresh but could eat canned. Very different, there is nothing wrong with this recipe.

@Ari from Ontario-- The Jello box states not to use FRESH Pineapple or Kiwi. The will prevent the Jello from setting. Canned fruit is fine.
