PINEAPPLE ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. finely chopped zucchini (use food processor or blender)
1 c. crushed pineapple, well drained
1 tsp. lemon rind

Beat eggs, sugar and vanilla until thick. Add zucchini and pineapple. Combine: 1 c. ground oat flour 1 1/2 tsp. salt or less 1/4 tsp. baking powder 1 tsp. baking soda 3/4 tsp. cinnamon 3/4 tsp. nutmeg 1 c. raisins (can use 1/2 c. dark & 1/2 c. light) 1 c. chopped nuts

Slowly add dry ingredients, mixing well after each addition. Add raisins and nuts. Blend well. Bake at 350 degrees for approximately 1 hour.

OAT FLOUR: Place 1 1/4 cups Quaker Oats in blender or food processor. Blend one minute, stopping blender occasionally to stir oats. Makes about 1 cup flour. Do not sift when using!!!!
