PINEAPPLE ZUCCHINI BREAD 
1 egg
1 c. sugar
1/2 c. oil
1 tsp. vanilla
1 c. grated, peeled zucchini
1/2 c. crushed pineapple, drained
1 1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 c. chopped nuts
1/4 c. raisins

Beat egg and continue beating while adding oil, sugar, zucchini, pineapple, and flavoring. Add dry ingredients. Fold in nuts and raisins. Bake in greased loaf pan at 350 degrees for one hour.
