SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
2 c. coarsely shredded zucchini
1 (8 1/2 oz.) crushed pineapple, drained
3 c. flour
1/2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. raisins
1 c. walnuts, chopped

Beat eggs; add oil; beat well. Add sugar and vanilla beating until thick and foamy; stir in zucchini and pineapple. Combine flour, soda, salt and baking powder. Add to liquid. Stir in nutmeg and cinnamon, walnuts and raisins; gently blend. Bake at 350 degrees for 1 hour. Makes 2 loaves.
