SIMPLE CHOCOLATE CAKE 
2 c. flour
2 c. sugar
3/4 c. cocoa powder
2 tsp. baking soda
2 tsp. baking powder
2 eggs
3/4 c. oil
2 c. boiling water
1 tsp. vanilla

Mix first 7 ingredients. Add hot water a little at a time. Batter will be thin. Add vanilla.

Bake in a 13 x 9-inch pan at 375°F for 35 minutes.

I made this cake tonight for my husband's birthday party. It was delicious! I was a bit nervous when I saw the consistency of the batter, but everyone at the party loved the cake. I used egg beaters instead of eggs and only baked it for 30 minutes. Also used cream cheese frosting.

Hi Tara,

Keep baking until the toothpick nearly comes out clean. One word of advice - don't open the oven too early to test. You should wait until most of the baking time has passed before checking. If you open the oven too soon, the cake may catch a draft and fall. Once you see the cake sag in the center, it's likely never to fully bake. When you do open the oven to check on the cake because you think it's probably done, keep the test quick and close the oven right away if you find it's not done yet.

I used this recipe, but substituted sugar with organic coconut palm sugar and a half dozen or so drops of organic Stevia liquid (I try to minimize the amount of sugar my children consume) and this cake was delicious! It rose wonderfully, was light but still moist. Adding this one to my recipe book. Thank you for sharing.

Not only was this cake a "piece of cake" to make... ;) it was also amazingly delicious and MOIST. Perfect last minute dessert to have in your back-pocket, because WHO doesn't like chocolate cake? Only trouble is, it is sooo easy, I think I will make it more often that I probably should!

MMM...delicious! I made this cake for Fourth of July. I frosted it with vanilla frosting and put blueberries and strawberries on it so it would be like a flag for the Fourth of July. This is a great recipe and I'll be using it again in the future. I'd recommend this to everyone!!! :)
