CHICKEN LOAF - WITH SAUCE 
4 1/2 tbsp. butter
1/2 c. flour
1 c. chicken broth
1/2 c. milk
2 tbsp. minced onion
2 tbsp. green pepper, chopped
2 tbsp. diced pimento
2 eggs, beaten
3 c. chopped, cooked chicken
Salt to taste

Melt 4 tablespoons butter. Add flour and blend. Stir in broth and milk; stir-cook until thick. Use remaining butter, saute onion and green pepper. Combine sauce, vegetables with remaining ingredients. Bake at 350 degrees for 1-1 1/2 hours or until brown, in a greased loaf pan.

SAUCE FOR TOP:

1 1/2 c. chicken broth
2 hard boiled eggs, chopped
1 can cream of mushroom soup
3 tbsp. flour, approx.

Combine broth, eggs and soup; stir in flour and cook-stir until slightly thickened. Serves 6-8.
