1 1/2 c. sugar
1 c. Puritan oil
3/4 c. egg substitute (equals 3 eggs)
2 c. flour
7 tsp. cocoa
1 tsp. vanilla
1 1/2 tsp. baking soda
1 (No. 2) can diced beets, drained and mashed
Dash of salt
Powdered sugar

Mix all ingredients well. Bake at 350 degrees for 45 minutes. Pour into cake pan sprayed with vegetable cooking spray. Sprinkle top with powdered sugar.
