BEEF RICE CASSEROLE 
1 lb. ground beef
1/4 c. onion
3/4 tsp. salt
1/2 tsp. pepper
1 can whole tomatoes
1/2 tsp. oregano, optional
1 (10 oz.) pkg. Italian frozen vegetables
1 c. instant rice
1 1/2 c. liquid (juice off tomatoes & water)
1/2-1 tsp. garlic powder

Saute onions. Remove from skillet. Add ground meat and brown. Add salt, pepper and garlic powder. Heat liquid to boiling; add frozen vegetable. Separate with fork; simmer 2 minutes. Bring to boil again; stir in rice; cover and remove from heat. Let stand 5 minutes.

Add ground beef and onion mixture and tomatoes; stir gently. Put in casserole and heat thoroughly in oven or on top of stove, taking care to avoid scorching. Suggest serve with Parmesan cheese, garlic bread and green salad.
