WESTERN BEEF RICE CASSEROLE 
1 lb. ground lean beef
2 tbsp. oil
1/2 c. chopped onion
1 c. sliced celery
1/4 c. chopped green pepper
1 c. raw rice
2 1/2 c. canned tomatoes
1 c. water
2 tsp. salt
1 1/2 tsp. chili powder
1/4 tsp. black pepper
1/2 tsp. Worcestershire sauce

Brown beef in oil. Remove meat from pan and add the onion, celery, green pepper and rice. Cook stirring until browned. Add the tomatoes, water, seasonings and meat; bring to boil. Pour into a 2 quart casserole and cover. Heat oven to 325 degrees for about 1 hour.

You forget the ripe olives! The original recipe calls for ripe olives which give a rich mouth-feel and a contrast of color. I love adding mushrooms, too.
