MINT BROWNIES 
2 squares butter
4 eggs
1 1/2 tsp. vanilla
4-6 tbsp. cocoa
1 1/2 c. sugar
1 1/4 c. flour
1 c. chopped nuts

Melt butter. Add cocoa and mix well with a wire whisk. Stir in sugar. Add eggs, one at a time, mixing well after each addition. Add vanilla. Mix in flour and nuts. Spread in a 9"x13" greased pan. Bake for approximately 25 minutes at 350 degrees. Cool and top with mint icing. After icing has set, then frost with your favorite chocolate icing.

MINT ICING:

1/4 c. butter
1/4 c. cream (half & half)
1 tsp. peppermint extract
Powdered sugar
2 drops green food coloring

Melt butter. Add cream and bring to a boil. Beat in powdered sugar until mixture becomes right consistency to spread. Add extract and food coloring.
