APPLE MUFFINS 
1 2/3 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
Sugar substitute to equal 1 tbsp. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1 egg, slightly beaten
2/3 c. skim milk
1/4 c. reduced calorie butter, melted
1 c. apples, minced

Sift flour, baking powder, salt, sugar substitute and spices into medium mixing bowl. Combine egg, milk and butter. Add egg mixture to dry ingredients, blending only until flour is moistened. Fold in apples. Pour batter into 12 nonstick muffin cups, filling each 2/3 full. Bake at 400 degrees for 25 minutes. This is a recipe for diabetics. 1 muffin may be exchanged for 1 bread and 1/2 fat.
