APPLE CINNAMON MUFFINS | |
2 c. finely crushed graham crackers (about 12) 1/2 c. flour 1/4 c. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1 egg (or equivalent) 1 (8 oz.) carton plain lowfat yogurt 1/4 c. oil 1 c. pared, chopped apple (1 lg.) Heat oven to 400 degrees. Stir together dry ingredients. Combine egg, yogurt, and oil. Add liquid ingredients all at once to graham mixture; stir only until moistened. Fold in apples. Fill greased muffin tins. Bake 20 to 25 minutes. |
