CINNAMON APPLE MUFFINS 
1 c. all-purpose flour
1/2 c. whole wheat flour
1/2 c. brown sugar, packed
2 tsp. baking powder
1/4 tsp. salt
1/3 c. apple juice
1 egg, slightly beaten
1/4 c. oil
1 Jonathan or spicy mild apple (6 oz.)

CINNAMON TOPPING:

Combine: 1/2 tsp. ground cinnamon

Yield: about 3 tablespoons.

Place flours, brown sugar, baking powder and salt in a work bowl or food processor; pulse to mix. Transfer to a medium bowl. Core unpeeled apple and cut into large chunks. Place in processor and pulse 5 times or until finely chopped (makes little over 1 cup).

Combine apple juice, egg and oil. Pour over flour mixture and stir until just combined. Stir in chopped apple. Spoon batter into 12 greased muffin cups. Sprinkle with Cinnamon Topping. Bake at 400 degrees for about 20 minutes or until wooden pick inserted near center comes out clean. Carefully remove muffins and cool slightly on wire rack. Serve warm or reheat in foil. Yield: 12 muffins.
