CINNAMON APPLE MUFFINS 
2 c. flour
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 egg
4 tbsp. melted butter
1 c. milk
1 c. chopped apples
1/2 c. chopped walnuts

TOPPING:

1/2 c. brown sugar
1 tsp. cinnamon (or more to taste)

Preheat oven to 425 degrees. Combine dry ingredients in large bowl. Beat eggs in separate bowl and combine with milk and melted butter, then add to dry ingredients. Blend to moisten. Fold in apples and nuts. Pour batter into muffin tins, then sprinkle with brown sugar and cinnamon before baking. Bake 15 to 20 minutes until tops are golden brown. Yield: 8 medium muffins.
