CINNAMON APPLE MUFFINS 
2 c. flour
1/4 c. sugar
1/2 tsp. salt
1/2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
2 eggs
1 c. buttermilk
1/4 c. oil
3/4 c. finely chopped apples

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

Mix dry ingredients. Beat eggs with milk and oil. Add to dry ingredients. Add chopped apples. Blend just enough to mix. Fill well greased muffin tins 2/3 full. Sprinkle small amount of the topping of sugar mixed with cinnamon on top of each muffin. Bake at 425 degrees for 15-20 minutes. Enough mixture for 24 muffins.
