APPLE CINNAMON MUFFINS 
1/2 c. butter
3/4 c. white sugar
1 egg, beaten
1 c. buttermilk
1 tsp. salt
1 1/2 c. diced apples
1 c. flour
3/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon

TOPPING:

1 tsp. cinnamon
2 to 3 tbsp. white sugar

Blend butter, sugar and eggs until smooth. Add buttermilk, salt and apples, mix well. Stir together flour, soda, cinnamon and add, stirring only to moisten. Spoon in to muffin cups (grease or use paper cups) and sprinkle with topping. Bake at 375 degrees for 20 minutes. Makes 1 dozen.
