APPLE MUFFINS WITH CRUNCHY TOPS 
2 c. flour
3 tsp. baking powder
1/2 c. sugar
1/2 tsp. salt
3 tbsp. shortening or oil
1/3 c. brown sugar
1/3 c. pecans
1 egg
1 c. milk
1 c. chopped apples or 1 c. applesauce
1/2 tsp. cinnamon

Sift together dry ingredients. Cut in shortening. Combine eggs, milk and apples and add to flour mix. Stir only until flour is dampened. Fill greased muffin tins 2/3 full. Combine brown sugar, nuts, and cinnamon and sprinkle over batter. (May freeze batter and use later.) Bake at 400 degrees for 25 minutes. Makes 12 to 16 muffins.
