2 eggs
2 c. sugar
1/2 c. oil
1 c. pumpkin
2 1/4 c. flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
2 c. chopped apples

TOPPING:

2 tsp. butter
1 tbsp. flour
1 tbsp. sugar
1/4 tsp. cinnamon

Mix eggs, sugar, oil, and pumpkin. Combine flour, spice and soda and mix with pumpkin mixture. Stir in apples. Spoon into muffin cups. Prepare topping with pastry blender. Sprinkle topping on muffins. Bake 35 to 40 minutes at 350 degrees.
