APPLE MUFFINS 
2 c. self-rising flour
1 1/2 c. sugar
1 1/2 tsp. cinnamon
6 tbsp. butter
1 (8 oz.) carton sour cream
2 eggs
1 c. finely chopped apples

Mix flour and 1/4 cup sugar and cinnamon. Blend together melted 1/4 cup butter, sour cream and eggs. Stir into dry ingredients. Fold into apples. Fill muffin cups 2/3 full.

Cut 2 tablespoons butter into 1/4 cup sugar, 3 tablespoons flour and 1/4 teaspoon cinnamon in bowl. Crumble. Spread on top of filled muffin cups. Bake at 350 degrees 15 to 20 minutes.
