BANANA NUT LOAF 
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. shortening
1/2 c. sugar
2 eggs
1 tsp. grated orange peel
1 c. mashed banana
2 tbsp. milk
1/2 c. chopped pecans or walnuts

Stir thoroughly the first 4 ingredients. Cream shortening and sugar until light and fluffy. Add eggs and orange peel, beat well. Combine bananas and milk. Add to creamed mixture alternately with flour mixture, beating just until smooth after each addition. Stir in nuts. Turn into greased 9x5x3 inch loaf pan. Bake at 350 degrees for 45 to 50 minutes. Cool, wrap, store overnight. Makes 1 loaf.
