BANANA LOAF 
2/3 c. Crisco
2 1/2 c. sifted cake flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt (use 1/2 tsp. if desired)
1 1/4 c. mashed fully ripe bananas
2/3 c. buttermilk
2 lg. eggs

Place Crisco in mixer bowl. Sift the dry ingredients. Add dry ingredients, bananas, and 1/3 cup buttermilk to mixer bowl. Beat vigorously 2 minutes. Add remaining 1/3 cup buttermilk and 2 eggs. Beat 2 minutes longer. Bake in greased and floured small or medium loaf pans at 350 degrees for about 40 minutes. Let cool 10 minutes and remove from pans. A double recipe makes 6 small loaves. Fill pans a little less than 2/3 full.
