BANANA POUND CAKE 
1 pkg. pound cake mix
1 c. mashed ripe bananas
2 eggs
1/2 c. chopped nuts, optional

Preheat oven to 325 degrees. Generously grease and flour a 9 inch loaf pan. Omit milk or water called for in package directions. Combine mix, bananas and eggs and beat 3 minutes at medium speed on electric mixer or 450 strokes by hand. Fold in nuts. Spoon into 9 inch loaf pan and bake 1 1/2 hours or until golden brown and cake springs back when lightly touched on top. Cool in pan for 30 minutes. Turn out on rack and cool. Store cake in plastic wrap.
