BANANA NUT POUND CAKE 
1 1/2 c. salad oil
3 well beaten eggs
1 tsp. baking soda
1 1/2 c. mashed ripe bananas
1 c. coconut
2 1/2 c. sugar
3 c. flour
3/4 tsp. salt
1/2 c. buttermilk OR 1/2 c. milk plus 1/2 tbsp. vinegar
1 c. chopped pecans

A substitute for buttermilk may be made by blending 2 1/2 teaspoons lemon juice and sweet milk to make 1/2 cup.

Mix sugar and oil. Stir in eggs. Sift flour and salt. Mix soda with buttermilk. Stir in flour and buttermilk. Add vanilla, bananas, coconut and pecans. Place in bundt or tube pan and bake 325 degrees for 1 hour and 20 minutes.

Amazing pound cake recipe. I love pecans so I add an extra half cup and its too sweet so I only add 1 and 1/2 cup of sugar.
