RICOTTA CHEESE CAKE 
"Old Fashion Italian Cheese Cake"

1 (31 oz.) container of Ricotta
2 c. of sugar
8 eggs
1/2 c. flour
1 1/2 tsp. vanilla extract
1/2 c. (sm. container) of heavy cream, whipped, set aside
(Grind 1 lemon peel (rind)

Preheat oven to 425 degrees. Mix Ricotta, sugar, eggs, flour, extract, until smooth.

Fold in lemon grind and cream.

Place into a 12 inch spring form pan which has been well buttered.

Bake 10 minutes then lower oven temperature to 350 degrees and bake 1 hour more, then turn off heat and allow to remain in oven with door closed at least 2 hours. You may place in refrigerator or if serving shortly, place in freezer 1 hour to cool then serve.
