BANANA BREAD
2 c. sugar
3/4 c. butter
2 eggs
3 c. all-purpose flour, sifted
1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/8 c. buttermilk
1/2 tsp. vanilla flavoring
1 1/2 c. bananas, mashed
1 c. pecans, chopped
1/4 to 1/2 c. milk, if needed to moisten bread

Cream butter, add sugar. Beat in eggs one at a time. Sift dry ingredients together. Add alternately with buttermilk. Add vanilla and bananas and nuts. Bake in loaf pans (2 big pans or 4 small loaf pans). Bake at 350 degrees. When cake is done, cake will turn loose from side of pans.

NOTE: 1/4 to 1/2 cup milk may be used if needed so bread will be moist.

My husband and I were looking for a new banana bread recipe, and when I saw that this one had buttermilk I was intrigued. My husband set forth to make this bread and it turned out to be the most amazing banana bread I have ever had. I cannot even begin to tell you how moist it was and the flavor was amazing. LOVED THIS!

This is the recipe I was searching for that is in "Calling All Cooks" and the only recipe I use. My Aunt once gave it to me. She added cinnamon and nutmeg and it brings out the flavor so much! Thanks for posting, I lost my recipe.

Though there is no cooking time for this recipe either here nor in Calling All Cooks, it generally takes somewhere around 50 minutes to bake, though that may depend a lot on the shape and size of the pan you use. I've always baked it in an 8X11" single loaf. I advise using the toothpick-test to be sure the center is ready even if it has pulled away from the sides if you choose to bake the large single loaf though.

Also, this bread reheats nicely by the slice in the toaster oven and is delicious with a spread of butter or creme cheese.
