BANANA NUT LOAF 
2 c. all-purpose flour
2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1/2 c. butter or shortening
1/2 c. sugar
2 eggs
1 tsp. finely shredded orange peel
2 ripe bananas, mashed
2 tbsp. milk or 2 tbsp. orange juice
1/2 c. chopped pecans or walnuts

Lightly grease a 9 x 5 x 3 inch loaf pan; set aside. In mixing bowl, thoroughly stir together the flour, baking powder, salt and soda; set aside. In small mixer bowl cream the shortening and sugar till light and fluffy. Add eggs and orange peel; beat well. In small bowl mash bananas with fork (you should have about 1 cup); stir in milk. Add flour mixture and banana mixture alternately to creamed mixture. Beat till smooth after each addition. Fold in nuts. Pour batter into prepared pan. Bake in 350 degree oven for 45 to 50 minutes or till wooden pick inserted near center comes out clean. Turn out and cool on wire rack. Makes 1 loaf.
