BANANA-NUT LOAF 
2 c. flour
2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1/2 c. shortening
1/2 c. sugar
2 eggs
1 tsp. grated orange peel
1 c. mashed banana (the blacker or riper the better!)
2 tbsp. milk
1/2 c. chopped walnuts

Stir first 4 ingredients. Cream shortening and sugar until fluffy. Add eggs and orange peel; beat well. Combine banana and milk. Add to creamed mixture alternately with flour mixture, beating until smooth. Stir in nuts. Turn into greased 9x5x3 inch loaf pan. Bake at 350 degrees for 45 to 50 minutes.

Makes 1 loaf.
