CARROT CAKE 
4 eggs
1 c. oil
1 1/2 c. sugar
2 c. flour
1 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
3 c. carrots, grated
1 c. walnuts, chopped

Beat eggs. Add sugar and oil, and beat again. Add dry ingredients and mix well. Add carrots and nuts. Bake, in greased and floured layers or 9 x 13-inch pan, at 350 degrees for 40 to 45 minutes.

CREAM CHEESE FROSTING:

1/4 lb. butter, softened
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 lb. powdered sugar

Mix and spread on cake. Sprinkle with coconut, if desired. Makes a large recipe.
