EAST CARROT CAKE 
2 c. self-rising flour
2 c. sugar
2 tsp. cinnamon
1 1/2 c. Wesson oil
4 eggs
2 sm. jars strained carrots (baby food)

Mix all dry ingredients. Add Wesson oil and mix well. Add eggs and mix. Add carrots and mix well. Bake at 325 degrees for 40 minutes in greased and floured 8 or 9 inch pan. Cool before frosting.

FROSTING:

1 stick butter
8 oz. cream cheese
1 lb. box powdered sugar
1 1/2 tsp. vanilla

Blend butter and cream cheese until very smooth. Gradually add powdered sugar and vanilla. Can add chopped nuts if desired.
