GREEK CARROT CAKE | |
2 c. cake flour 2 tsp. baking powder 1 1/2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 4 eggs 2 c. sugar 1 1/2 c. vegetable oil 2 c. carrots, grated 1 (No. 2) can crushed pineapple, drained 1 c. nuts, chopped Sift dry ingredients. Mix sugar and oil. Add eggs. Add dry ingredients. Add carrots, pineapple and nuts. Pour into 9 x 13-inch, greased and floured pan. Bake at 350 degrees until done when tested with cake tester. ICING: 1 box confectioners sugar 1/2 stick butter, melted 8 oz. pkg. cream cheese 1 tsp. vanilla Mix thoroughly and spread over cake. |
