EASY CARROT CAKE | |
1 3/4 c. sugar 1 1/4 c. oil 4 eggs 2 c. flour 2 tsp. baking powder 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 3 c. grated carrots 1 can drained crushed pineapple (15 1/2 oz.) FROSTING: 1/4 c. butter 8 oz. cream cheese 2 tsp. vanilla 1 lb. confectioners' sugar 1. Mix sugar, oil and eggs until creamy. 2. Sift flour, baking powder, baking soda, salt and cinnamon. 3. Added grated carrots and crushed pineapple; mix well. 4. Bake in greased 13 x 9 inch pan at 350 degrees, approximately 45 minutes. Check with knife or toothpick. Frost with: Beat butter, cream cheese, vanilla and confectioners' sugar. |
