CARROT CAKE 
1 1/2 C oil
2 C sugar
4 lg eggs
1 1/4 tsp baking soda
1 1/4 tsp baking powder
2 C plus 1 tbsp flour
2 tsp cinnamon
1 tsp salt
3 C grated carrots
1/3 C nuts

Preheat oven to 375°F.

Cream oil and sugar. Add eggs and mix.

Sift all dry ingredients and add to mixture. Stir in carrots and nuts.

Bake 45 minutes or until done.

Frost with cream cheese frosting.
