ORANGE ROASTED CARROTS 
1 lb. carrots, pared
2 tbsp. chopped parsley
1 tsp. butter
2 tbsp. orange juice
1 tbsp. honey
1/2 tsp. salt

Cut carrots into 1/2 inch by 3 inch strips. Using shallow dish, dot with butter, and add juice, honey and salt. Cover loosely with foil and bake 25 minutes at 350 degrees. Uncover and bake 20 minutes longer. Sprinkle with parsley and serve.

Servings: 4.
