ORANGE CARROT CAKE | |
3 c. flour 2 c. sugar 2 1/2 tsp. baking soda 2 1/2 tsp. cinnamon 1 1/4 c. cooking oil 3 eggs 1 c. coconut 1 tsp. salt 2 c. shredded carrots 2 tsp. vanilla 1 tsp. grated orange peel 1 (11 oz.) can Mandarin oranges, undrained Frosting (recipe follows) Blend all ingredients; beat 2 minutes at highest speed. Pour into greased 13 x 9-inch pan. Bake 45 to 55 minutes or until done in a 350°F oven. Frosting: 1 (8 oz.) pkg. cream cheese 2 tbsp. melted butter 1 tsp. vanilla 3 c. confectioners sugar Blend until smooth. Spread on cooled cake. Sprinkle with nuts, if desired. |
