H.'S PRIZE WINNING ZUCCHINI
BREAD
 
3 c. raw zucchini, grated
1 1/2 c. oil
3 c. sugar
4 eggs, beaten
3 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. salt
1 c. nuts, chopped
1 tsp. vanilla

Cream sugar and oil, add eggs and mix well. Sift dry ingredients together and add alternately with zucchini. Stir in vanilla and nuts. Bake in 3 bread pans at 350 degrees for 45 to 60 minutes, test with cake tester.
