ZUCCHINI BREAD 
1 1/2 c. unbleached flour
1 1/2 c. whole wheat flour
1 tbsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3/4 c. Egg Beaters
1/2 c. sugar
1/2 c. brown sugar, packed
1/3 c. canola oil
2/3 c. buttermilk
2 tsp. vanilla
2 c. grated zucchini

Combine dry ingredients. In a separate bowl combine Egg Beaters, sugars, oil, buttermilk, and vanilla. Add dry ingredients. Mix well. Add grated zucchini. Mix well. Pour into 2 loaf pans sprayed with non-stick vegetable coating. Bake 50-60 minutes in a 350 degree oven.
