CHICKEN ALA MARIA 
3/4 c. fine dry Italian seasoned bread crumbs
2 tbsp. grated Parmesan cheese
6 whole large chicken breasts, skinned, boned and halved lengthwise
1/2 c. sliced green onion
2 tbsp. butter
2 tbsp. flour
1 c. milk
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
3/4 c. diced fully cooked ham

Combine bread crumbs and cheese, reserve half for topping. Rinse chicken, pat dry. Dip chicken in crumb mixture to coat lightly. Place in a 9 x 13 baking dish.

In a small saucepan cook onion in butter until tender. Stir in flour until blended. Add milk. Cook and stir over medium heat until thickened and bubbly. Stir in spinach and ham. Spoon spinach mixture over chicken, sprinkle with remaining crumb mixture. Bake, uncovered at 350 degrees for 40 to 45 minutes or until chicken is no longer pink.
