CHICKEN A LA MARIA 
3/4 c. Italian seasoned bread crumbs
1/4 c. Parmesan cheese
6 whole skinless, boneless chicken breasts, halved
1/2 c. sliced green onion
2 tbsp. butter
2 tbsp. flour
1 c. milk
1 (10 oz.) pkg. frozen chopped spinach, thawed & drained
4 oz. boiled ham slices, diced

Combine bread crumbs and cheese. Dip chicken breast halves in crumb mixture to coat lightly. Arrange in 13 x 9 inch baking dish. Set remaining crumb mixture aside.

In saucepan, cook onion until tender. Blend in flour and milk. Cook until thickened and bubbly. Stir in spinach and ham. Spoon spinach over chicken. Sprinkle with remaining bread crumbs. Bake uncovered in 350 degree oven for 40-45 minutes. Makes 12 servings (can be easily halved for fewer servings). Delicious.
