CHICKEN A LA MARIA 
3/4 c. Italian seasoned bread crumbs
1/4 c. grated Parmesan cheese
6 whole lg. chicken breasts, skinned, split lengthwise and boned
1/2 c. sliced green onion
2 tbsp. butter
2 tbsp. all-purpose flour
1 c. milk
1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
1 (4 oz.) pkg. boiled ham slices, diced

Combine bread crumbs and cheese. Dip chicken breast in crumb mixture. Arrange in 9x13x2 inch baking dish. Set remaining crumb mixture aside.

In a saucepan, cook onion in butter until tender. Blend in flour. Stir in milk all at once. Cook and stir until thickened and bubbly. Cook 1 minute more. Stir in spinach and ham. Spoon spinach mixture over chicken, sprinkle with remaining crumbs. Bake uncovered at 350 degrees for 40-45 minutes until done. Serves 12.
