CHICKEN ALA MARIA 
3/4 c. Italian seasoned fine bread crumbs
1/4 c. grated Parmesan cheese
6 whole lg. chicken breasts, skinned, split lengthwise and boned
1/2 c. sliced green onion
2 tbsp. butter
2 tbsp. all purpose flour
1 c. milk
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
1 (4 oz.) pkg. boiled ham slices, diced

Combine bread crumbs and cheese. Dip chicken breast halves in crumb mixture to coat lightly. Arrange in 13 x 9 x 2 inch baking dish. Set remaining crumb mixture aside. In saucepan cook onion in butter until tender. Blend in flour; stir in milk all at once. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Stir in spinach and ham. Spoon spinach mixture over chicken; sprinkle with the remaining crumb mixture. Bake uncovered at 350 degrees for 40-45 minutes or until done. Makes 12 servings.
