LITTLE PEPPERNUT COOKIES | |
2 c. dark Karo corn syrup 2 c. pure lard (shortening won't do) 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 1/2 tsp. black pepper 2 c. sugar 1 c. black coffee, brewed 1 1/2 tsp. nutmeg 1 1/2 tsp. ginger 1 1/2 tsp. cloves 12-13 c. flour Put all of the ingredients, except the flour into a large mixing bowl and mix thoroughly. Then add 4 to 6 cups of flour and blend thoroughly. Continue adding remaining flour and mixing by hand. Then roll out the mixture into long "snakes" (1/2" diameter) and cut into small pieces. Place small pieces close together on an ungreased cookie sheet and bake at 375 degrees for 20 minutes. This makes 8 (1 pound) coffee cans full of cookies. Store dough in refrigerator if you don't want to bake all at one time. |
