POTATOES AND MUSHROOMS IN CREAM 
1 lb. potatoes
1 c. heavy cream
1/4 lb. fresh mushrooms
Salt and pepper
1 tbsp. chopped parsley

Peel potatoes and cut into slices. Soak in cold water. Put cream into a microwave dish - microwave uncovered on high until reduced to a 1/2 cup (7 to 10 minutes). Slice mushrooms, drain. Drain potatoes. Stir together - potatoes, mushrooms, cream and season. Microwave on high uncovered 9 to 11 minutes, stirring every 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
